Everything you should know before you buy a pizza oven.
Neapolitan pizza in 90 seconds is the easy part. Sizing, wood or gas, what it weighs, where it can go, delivery day and the five-day cure. Written to answer the questions, not to sell you a model.
The short version

Almost every expensive pizza oven mistake traces back to doing this list out of order. If you read nothing else on this page, read this.

Decide wood, gas or both before anything else
This one choice sets your budget, your install and how often you will realistically fire it on a weeknight. On a masonry oven the gas port is drilled at the factory, so it cannot be added later. Get this right first.

Sort out what it sits on
A traditional masonry oven weighs 1,250 to 1,800 pounds. It needs a level, load-bearing, non-combustible base at roughly counter height, and that has to exist before delivery day, not after.

Budget the project, not the oven
Base, pad, a gas burner and its licensed install, a cover, and the peels and tools you cannot cook without. Get a real number for the whole thing before you commit to any of it.

Check clearances and your local ordinance
At least three feet from any structure, nothing combustible above the chimney, and a spark arrestor cap where wildfire rules apply. Your city or county sets the actual numbers. Clear your HOA separately.

Measure the delivery route
Not the patio. The gate, the side path, the turn past the AC unit. A traditional oven crate is about 43 by 43 by 39 inches and weighs the better part of a ton. Measure the narrowest point and subtract two inches.

Size by the cooking floor and the door opening
Those are the only two numbers that decide what you can actually cook. And remember the fire lives inside the oven, taking up roughly a third of the floor for the whole session.

Then choose the oven
By this point the shortlist writes itself and what is left is mostly façade. Terracotta, stacked stone, slate, smooth cast stone or exposed rustic brick all cook identically. That is the easiest decision on the list.
The question worth asking first
Will you actually use it?
This is the most common private worry among people shopping for a pizza oven, and it deserves an honest answer rather than a sales one.
Whether an oven gets used has very little to do with how excited the owner was the day they bought it. It has almost everything to do with friction, and in this category the friction is unusually specific.
Ovens that get fired regularly share three traits. They sit close to the kitchen door, because you will walk back and forth for toppings more times than you expect. The owner has solved dough, which is the part almost nobody plans for. And the owner has made peace with the fact that a wood fire takes 45 minutes to an hour and a half to bring the oven up, so pizza night is a plan rather than an impulse.
The oven is rarely the bottleneck. Dough is. Make pizza three Fridays in a row in your kitchen oven first, using a real recipe with an overnight cold ferment and a 00 flour. If you keep doing it, buy the oven with total confidence and it will change your cooking. If you stop after the second Friday, the oven was never going to fix that, and you just avoided a major purchase you would not have used.
The other honest point is about fuel. A wood fire is the best version of this and it is also a commitment: sourcing seasoned hardwood, tending a fire for an hour, and sweeping ash afterward. People who love that part use their ovens for decades. People who wanted pizza on a Tuesday are usually far happier with a gas burner or a hybrid, and there is nothing wrong with being that person.
We would rather say that up front than sell you something that becomes a very expensive garden feature.
The full bill
The bill has more lines than the oven.
The price on the product page is the oven. It is usually the largest line by a distance, but it is not the whole bill, and the gap is where people get caught out.

Two things swing this total more than anything else: whether you already have a suitable surface at the right height, and whether you want gas. Get quotes for your own house before you set a budget, because labor rates and site access vary enormously.
A realistic way to think about it
For a wood-fired oven going onto a patio you already have, the extras are modest: a cover, a set of tools, a load of wood. Most of your budget is the oven.
For a gas or hybrid oven that needs a burner, a licensed install and a base built from scratch, the extras can approach the cost of the oven itself. That is the single most common budget surprise in this category, and it is entirely avoidable by pricing it out before you order rather than after.
The tools that are not really optional
- Two peels. A wood peel to launch, a metal one to turn and retrieve. Wood releases dough cleanly, metal slides under a cooked base. Most people who buy one end up buying the other within a month.
- An infrared thermometer. The built-in dome thermometer is useful but reads in Celsius on European-made ovens and measures air, not floor. Floor temperature is what cooks the base. These are cheap and they are the difference between guessing and knowing.
- An oven brush and a shovel. One to sweep the floor between bakes, one to move the fire and clear ash.
- A bubble popper. A small hooked tool for turning the pizza and knocking down blistering. Optional, universally loved.
- A cover, if the oven lives in the open rather than under a roof.
- Dry hardwood and somewhere to keep it dry. Wet wood smokes, will not reach temperature and sours the flavor.
On freight, since it is the one people get burned by
Pizza ovens ship on a pallet by freight truck. A traditional oven crate measures roughly 43 by 43 by 39 inches and the oven inside weighs 1,250 to 1,800 pounds. That is not a parcel shipping problem, and it is standard across the category to advertise free shipping to commercial addresses and then add a residential liftgate charge on top.

The decision everything hangs on
Wood, gas or hybrid.
This is the first real decision and the hardest one to reverse. It is worth answering plainly, including the parts that are inconvenient.
90 seconds is the pizza. Once the oven is at temperature, a Neapolitan pie bakes in about 90 seconds, and you can run them back to back all evening. 45 minutes to an hour and a half is the oven. That is the one-time warm-up from cold at the start of the session. So a pizza night is roughly an hour of fire, then pizza every ninety seconds for as long as you want. Once it is hot, it stays hot.

A useful trick for the warm-up: build the fire in a log-cabin stack and hit it with a butane torch for two or three minutes rather than using paper. It gets you toward the 45 minute end of the range, and paper only makes ash.
On a masonry oven the gas burner needs a 4.5 inch hole through the oven floor, and that hole is cut at the factory on hybrid-configured ovens. An oven bought wood-only cannot be converted afterward. If there is any chance you will want gas within the next ten years, buy the hybrid configuration now. The upcharge for the hybrid configuration is small next to what it buys you.
If you are going gas, three things to know
- Natural gas and propane are not interchangeable. The burner is built for one or the other at the factory. Decide which utility you are running off before you order, because swapping later means a different part.
- Installation must be done by a licensed gas technician. This is not a formality that gets waived. Self-installation voids the manufacturer warranty on both the burner and the oven.
- Manual and automatic burners are different products. A manual burner has a push-button pilot and a dial, needs no electricity at all, and does the job. An automatic burner has a digital setpoint, cycles itself to hold temperature, has a boost mode, and needs a 110V supply nearby. The automatic one costs roughly twice as much and earns it if you are cooking in volume or hate babysitting a dial.
A word for the wood purists
Everything a wood fire does that gas does not comes from the flame rolling across the dome and the smoke touching the top of the pie. It is genuinely different, and it is why the whole category exists. If that is what you want, buy wood-only with a clear conscience and spend the gas budget on better hardwood and a proper peel instead.
Burn seasoned hardwood only: oak, maple, walnut, mesquite, apple and other fruit woods. Never softwoods like pine or spruce, which are resinous, and never coal. Resinous and treated wood soots the dome, tastes bad in the food and creates a real chimney fire risk.
Capacity
How to size an oven honestly.
Two numbers decide what you can cook: the interior cooking dimension and the door opening. Everything else on the spec sheet is secondary.

Two pies at once assumes you are competent at turning both. For the first month you will cook one at a time regardless of what the oven holds, and that is normal.
The fire takes up room
In a wood-fired oven the fire lives inside the cooking chamber, pushed to one side or the back, for the entire session. On a 31 inch floor it occupies roughly a third of it. That is the most common sizing surprise: the usable baking area is meaningfully smaller than the spec sheet number, and it is why an oven that theoretically fits two pies is often a comfortable one-pie oven in practice.
Low dome or tall dome, which matters more than the finish
Masonry ovens come in two shapes and it is a real difference, not a styling one.
- Low dome, wide opening. Roughly 19.7 by 10.6 inch door. Heat is driven straight down onto the floor, which is what fast, high-heat pizza wants. Wider opening makes it easier to work two pies. The pizza specialist.
- Tall dome, higher opening. Roughly 15.5 by 12 inch barn-style door. The extra height takes a rotisserie spit, a Dutch oven or a whole bird, and the fire is far more visible so the oven doubles as a fire feature. The all-rounder.
If you are buying this to make pizza and mostly pizza, take the low dome. If you want to roast, bake bread and have the fire be part of the evening, take the tall dome. Both make excellent pizza. Neither is an upgrade over the other, whatever the price similarity suggests.
Get the cooking height right
The oven floor should sit somewhere around 36 to 42 inches off the ground, roughly kitchen counter height. Too low and you are stooping over a 900 degree opening with a long peel. Too high and you cannot see the far side of the pie. This is set by whatever the oven sits on, which is one more reason to plan the base first.
Bigger is not automatically better. A larger oven takes longer to come up to temperature and burns more wood to get there, and it has to be brought up as a whole even when you are cooking two pizzas. If you normally cook for two to four people, the 30 to 32 inch range is the sweet spot. Spend the difference on a better finish or a hybrid burner rather than on more floor you will not use.

Two genuinely different products that both make excellent pizza. The choice is about permanence, not quality.
Portable
Goes with you
Stainless steel double wall around a ceramic blanket, 200 to 400 pounds, up to temperature in about 30 minutes. Beach, tailgate, campsite, or just wheeled out of the garage on a Friday.
Chimney cap with spark arrestor comes fitted. Peel, thermometer and ash holder are usually included, so it is much closer to a complete purchase out of the crate.
The trade is thermal mass. Less brick means the temperature drops between pies and you feed the fire more often.
Traditional masonry
The backyard centrepiece
A refractory fire brick dome, triple insulated, 1,250 to 1,800 pounds. Holds serious heat, cooks all evening, keeps baking bread on residual heat the next morning.
Available in a dozen façades, from terracotta brick to stacked stone to smooth modern cast stone, and in wood-only or hybrid configurations.
Heavy, permanent and slower to heat. Needs a rated base, a five day cure and a spot you have genuinely committed to.
If you want pizza this month with no site work, or you want to take the oven places, portable is the answer and it is a serious oven rather than a compromise. If you want the thing you cook on for the next twenty years and the object your yard is arranged around, traditional masonry is the category standard.
Worth knowing: a freestanding masonry oven can be built into an outdoor kitchen later. The finished façade is designed to be exposed or surrounded, so buying the oven now and enclosing it in two years is a completely normal path. If you are already building the kitchen, set it in while the surround is open.
Materials
How it is built decides how it cooks.
Both types hit the same peak temperature. What separates them is thermal mass, and thermal mass is the whole story of how an oven behaves.

The difference is not how hot they get. It is how long they stay there, and what they can do on the way back down.
What to look for in a masonry oven
- A true refractory fire brick dome and floor, built with refractory mortar and steel mesh reinforcement, not cast concrete with a brick pattern pressed into it. Refractory brick survives thousands of cycles at 900°F. Ordinary concrete does not.
- Triple insulation, in quantity. High-density rockwool wrapped around the dome. This is the difference between an oven that holds heat overnight and one that bleeds it into your patio. The field test is simple: a properly insulated oven stays warm to the touch on the outside while the inside is at 900°F.
- Corrosion-resistant hardware. Cast aluminum and 304 stainless doors and chimneys hold up outdoors indefinitely. Plain iron looks beautiful and needs real maintenance, especially in humid or coastal air. If you are near salt water this is not a small detail, and it is a genuine reason to step up to a premium configuration.
- A high-heat viewing window in the door. Sounds cosmetic. It is not. Being able to see the fire without opening the door is how you manage the burn without dumping heat.
- A chimney cap with a built-in spark arrestor. Standard on portable ovens, usually a separate purchase on traditional ones, and worth having on both.
What to look for in a portable oven
- Double-wall construction with real insulation between the walls. A single-skin steel dome reaches temperature and then dumps it straight into the air. This is the main thing separating good portable ovens from cheap ones.
- A refractory cooking floor thick enough to store heat, rated for genuine high-temperature use. A thin stone cools the moment a cold pie lands on it and gives you a pale, floppy base.
- 304 stainless on the chimney and door, particularly if the oven will travel or live near the coast.
Every masonry oven cracks. Not might, will. Fine lines appear during curing and more show up over the first seasons, and they can get reasonably large when the oven is hot because the dome expands and contracts every time you fire it. European owners treat this as a sign of a well-seasoned oven. Quality manufacturers include a high-temperature crack repair kit with every brick oven precisely because they know it happens, and the patch goes on best while the oven is hot. Some crumbling around the concrete base edge is also normal and is not shipping damage. None of it affects how the oven cooks. If you want a surface that stays perfect forever, buy a steel oven instead, and we will tell you that honestly rather than let you be disappointed.
Site prep
Where it goes.
Four decisions, made once, that you live with for twenty years. On a 1,500 pound oven, moving it later is not really an option.
A base that can genuinely carry it
A traditional oven concentrates 1,250 to 1,800 pounds onto a footprint of roughly 39 by 39 inches, or 43 by 43 on the largest models. That is a serious point load. A poured slab, a block base or a steel stand rated for the weight all work. What matters is that it is level, non-combustible, will not settle, and drains water away.
Do not put a masonry oven on a wood deck without checking the framing. Standard residential decks are designed for around 50 pounds per square foot and this is several times that in one spot. It can be done with proper footings and blocking underneath, but someone needs to look at it first. Portable ovens are a different conversation and are usually fine.
Clearance, above and beside
You are putting an open fire in your yard. This is the section that gets skipped and the one that matters most.
- At least three feet from your house or any structure or wall, for ventilation and for safety. Your local ordinance may require more, and it governs.
- Nothing combustible directly above the chimney. No low eave, no vinyl soffit, no pergola slats, no overhanging branch. Sparks and hot gases go straight up.
- Fit a chimney cap with a spark arrestor. Portable ovens come with one. On a traditional oven it is worth adding, and in wildfire-prone areas it is often required.
- Think about where the smoke goes. Prevailing wind, your neighbor's deck, your own bedroom windows. A wood oven makes real smoke for the first twenty minutes of every fire.
- Leave working room at the mouth. You need space to stand with a long peel and space beside the door to land a hot pie.
Convenient, but visible
Two things pull in slightly different directions here and both are real. Close to the kitchen door means you will actually use it, because pizza night involves carrying dough, sauce, toppings, plates and drinks out and then going back for what you forgot. But an oven is also the best-looking thing in most backyards, and putting it where you can see it from the house adds more to the space than a scenic far corner ever will.
The good spot is usually both: within twenty or thirty feet of the door, in view, with counter space either side of the mouth. One side for dressed pies going in, one side for pies coming out.
If you are torn between two spots, this is a good moment to send us a photo of each one. Seeing the oven sitting in both usually settles it in about ten seconds.
Paperwork
Permits, fire code and HOA.
A freestanding wood-fired oven often needs no permit at all. Often is not always, and the exceptions are worth ten minutes on the phone before you order.
What can trigger a requirement
- Gas work. Nearly always permitted and inspected, whether it is a new line, a tank installation or a burner connection. This is the most common permit in the category.
- A built-in installation. Once the oven becomes part of a masonry structure, some jurisdictions treat it as construction rather than as an appliance.
- Setbacks. Minimum distances from property lines and structures. Three feet is the manufacturer's baseline for ventilation; your municipality may require more, and this catches people after the base is already built.
- Solid fuel restrictions. Some air quality districts and dense municipalities restrict outdoor wood burning. Rare, but absolute where it applies, and worth checking before you buy a wood-only oven.
- Seasonal burn bans. Common in dry regions and usually temporary. They affect when you can cook, not whether you can own it. Gas is unaffected by most of them, which for some people is the deciding argument.
- Spark arrestors. Required on the chimney in many wildfire-prone areas, and sensible everywhere.
Your HOA's architectural review is completely separate from any government permit. An HOA can restrict size, placement, materials, chimney height and whether you may burn wood at all, and it can compel removal of a structure that is fully permitted and fully legal. Get written HOA approval before you buy, not after, and run it in parallel with the building department rather than after them.
One phone call handles most of this. Ask your building department two questions: whether a freestanding wood-fired oven needs a permit, and what the setback is from the property line. Then tell your insurer you are adding an outdoor solid fuel appliance, because a few policies want to know and it costs nothing to say so.
Delivery day
What shows up, and what to do when it does.
Pizza ovens move by LTL freight, not by parcel carrier. The process is different from anything you have had delivered before, and knowing it in advance removes almost all of the stress.
How it arrives
- In a custom wooden crate on a pallet. Traditional oven crates run about 43 by 43 by 39 inches, some a few inches larger.
- By appointment. Once the shipment reaches your region the carrier calls to schedule a window. Keep your phone handy once tracking shows it moving.
- Curbside, on a liftgate. The truck lowers it to the ground at the end of your driveway. The driver's job ends there. Curbside does not include uncrating or placement, and the driver cannot help move it.
- An adult has to be there. Someone 18 or over must be present to receive and inspect. This is not a leave-it-at-the-door delivery.
- Moving it is on you. Add roughly 100 pounds to the oven weight for the crate and packaging. Line up a pallet jack, an appliance dolly and several people. For a genuinely tight site, piano movers or safe movers are the right call, and they are cheaper than the mistake.
The most avoidable delivery problem in this category is a crate that cannot reach the base. Measure the gate, the side path and every turn between the driveway and the final spot, take the narrowest point, and subtract two inches. Also check the surface: 1,700 pounds on a pallet jack does not cross grass, gravel or a soft lawn. If the route is genuinely impassable, that is a reason to look at a portable oven, and far better to find out now.
Inspect before you sign
This is the most important two minutes of the whole process, and on freight it carries real legal weight. Walk around the crate while the driver is still there. Look for crushed corners, punctures, water staining and shifted banding.
Note anything that looks wrong on the delivery receipt before you sign it. Signing a clean receipt is legal confirmation that the shipment arrived in good condition and it substantially limits what any freight claim can recover afterward. If the damage is severe, refuse the delivery, write "Refused due to damage" on the receipt, and photograph everything immediately. If the driver will not wait while you inspect, write that on the receipt too.
If you find something after unpacking
Concealed damage is still claimable but the window is short. Report it within 48 hours of delivery with clear photos of the product and the original packaging. Missing or incorrect items have a five day window. Keep every piece of the crate and packaging until the claim is closed, because a claim without the packaging is very hard to win.
Two things that are not shipping damage, so you know before you look: fine cracks that appear during the curing fires, and slight crumbling around the edge of the concrete base. Both are normal characteristics of a handmade masonry oven and both patch easily with the repair kit that ships with the oven. Transit damage looks like impact, not like a hairline in the stucco. If you are unsure, photograph it and send it to us and we will tell you straight.
The week nobody warns you about
Curing, and why you cannot skip it.
This is the single most important section on this page and the one most likely to be new information. Your masonry oven is not ready to cook the day it arrives.
A masonry oven is built from refractory brick and mortar, and both hold moisture. Not visible water, but moisture bound up in the material from manufacturing and from the trip across the Atlantic in a container.
Take that oven straight to 900°F and the trapped moisture turns to steam faster than it can escape through the masonry. It will find its own way out, and the way out is through your dome. Curing simply means driving that moisture out slowly, with small fires over five days. It takes no skill. It only takes patience.

Small fire, kept going through the day, holding roughly that temperature. Close the oven door each night so the heat stays in and moisture stays out until the cure is finished. Your built-in thermometer reads in Celsius because these ovens are made in Europe, which is the single most common source of confusion during curing. Always follow the schedule in the manual that ships with your oven.
Firing an uncured oven is the most common reason a masonry warranty claim gets denied, and manufacturers know exactly what uncured damage looks like. Five evenings of small fires protects the oven for the next twenty years. Do not let an eager guest talk you into making pizza on day two. And if the oven sits unused through a long wet winter, run two or three small fires before you take it hot again.
The white dome test
Here is the trick that makes an oven readable. As a fire builds, soot blackens the inside of the dome. When the oven reaches proper pizza temperature that soot burns off and the brick turns from black to white, starting at the top and spreading down. When the dome is white, the oven is ready. You will use this every session for the rest of the oven's life and it is more reliable than any thermometer on the door.
Your first pizzas will not be your best
Expect to burn one or two. A 900 degree floor cooks a base in about 90 seconds, which is faster than anyone's instincts. Launch, turn at 20 seconds, turn again, pull. It takes about three sessions before it feels natural and then it is easy forever. Good flour helps more than technique at the start: a 00 flour is what Neapolitan dough is built on.
The long run
Living with it.
What it costs to run, what it needs from you, and how long it lasts. This is the low-maintenance end of the outdoor category, which surprises people.
Running cost, in fuel rather than in dollars
Fuel prices move constantly and vary enormously by region, so the only useful version of this is what the oven actually consumes. Multiply by whatever you pay locally.

Either way this is one of the cheaper things in the yard to run. A cord of wood lasts most home cooks a season or more, and the warm-up is the bulk of the burn rather than the cooking.
Maintenance, in full
- Cleaning is sweeping. That is the whole job. Once the fire is out and cold, shovel and sweep the ash out and the oven is ready for next time. Never soap, never detergent, never a pressure washer. The floor is porous and absorbs whatever you put on it, then cooks it into your next pizza.
- Let the fire clean the dome. Soot burns off at temperature, which is exactly what the white dome is. There is nothing to scrub.
- Empty ash into metal, never plastic. Embers stay live in ash for days.
- Keep it covered when it is out in the open. If the oven lives under a roof or a pergola it is not strictly necessary. If it sits exposed, a cover matters. Occasional rain is fine. Sitting in standing wet or under snow for weeks is what does damage.
- Patch cracks with the high-temperature repair kit that comes with the oven, applied while the oven is hot. Purely cosmetic, entirely optional, and satisfying.
- Fit a chimney cap and leave it on. Rain down the flue is a slow way to ruin a dome.
- Oil iron hardware if your oven has it, especially in humid or coastal air. Cast aluminum and 304 stainless need essentially nothing, which is what you are paying for on the premium configurations.
- Cook in winter. These ovens work in every season and it is one of the best things about owning one. Just expect a longer warm-up when it is genuinely cold, and keep it protected between sessions.
How long it lasts
A properly cured masonry oven that is kept covered and dry runs decades. Refractory brick does not really wear out. There are wood ovens in service in Europe older than most of the houses around them. The variables in your control are curing, water and cover. Portable steel ovens have a shorter life, generally 10 to 20 years, limited by the metal rather than the cooking surface.
Worth knowing about warranties across the category: hairline and cosmetic cracking is excluded everywhere, as is base edge crumbling, damage from firing before the cure is complete, damage from leaving the oven exposed to standing wet, and damage from burning the wrong fuel. Shipping damage goes through the freight claim process rather than the warranty. None of that is a red flag. It is standard, and it is worth knowing before you need it.

The cheap end has a specific failure mode
Budget ovens do not usually fail dramatically. They fail by never getting hot enough. A thin, poorly insulated dome radiates heat into the yard as fast as the fire makes it, so the oven stalls somewhere around 600°F. That is fine for a casserole and it will not make Neapolitan pizza, which needs a floor in the high 800s to cook a base in 90 seconds. You end up with slow, pale, bready pizza and no way to fix it, because the problem is the wall.
The second failure is water. Ovens with poor insulation and unsealed masonry take on water, freeze and spall. That is a two or three season oven in a New England winter.
The gap between an oven that disappoints for three years and one that cooks for thirty is usually smaller than people expect, and it is roughly the cost of the first one, wasted.
Questions worth asking any seller
- Is the dome real refractory fire brick, and how is it insulated? "Triple insulated" should come with an actual material named.
- Is it a one-piece hand-built oven or a prefabricated kit assembled from panels?
- What is included? A crack repair kit, a ceramic dish, a peel and a thermometer all show up on some ovens and not others, and they add up.
- Who handles a freight damage claim, and what is the reporting window? You want a dealer who files it, not one who hands you a phone number.
- Is the seller authorized? On grey market and marketplace purchases the warranty is frequently the first thing to evaporate.

How long does a pizza actually take to cook?
About 90 seconds for a Neapolitan pie in a traditional oven at full temperature, and under three minutes in a portable oven. You turn the pizza three or four times in that window because one side cooks in roughly 20 seconds. Once the oven is up you can run pies back to back all evening.
How long does the oven take to heat up?
A traditional masonry oven takes roughly 45 minutes to an hour and a half from cold. A portable oven takes about 30 minutes. To get toward the fast end, build the fire in a log-cabin stack and light it with a butane torch for two or three minutes rather than using paper, which only makes ash. Cold weather pushes it longer. The oven is ready when the soot on the dome burns off and the brick turns white.
Can I convert a wood-fired oven to gas later?
No. A gas burner needs a 4.5 inch hole through the oven floor and that hole is cut at the factory on hybrid-configured ovens only. If there is any chance you will want gas later, buy the hybrid configuration up front. The upcharge for the hybrid configuration is small next to what it buys you. Installation must be done by a licensed gas technician; self-installation voids the warranty on the burner and the oven.
Do I need to cure a new pizza oven?
Yes, and it is the most important thing you will do. Curing drives the moisture out of the mortar and brick so it does not turn to steam and crack the dome. Five days of small fires, four to five hours each, holding roughly 140°F, 215°F, 300°F, 400°F and 480°F in turn. Close the door each night. Your built-in thermometer reads Celsius, since these ovens are made in Europe. Follow the schedule in your manual.
Will my oven crack?
Yes. All handmade brick and clay ovens crack to some degree, usually starting during the cure, and cracks widen when the oven is hot and close as it cools. It does not affect how the oven cooks. A high-temperature repair kit ships with every traditional brick oven for exactly this reason, and it goes on best while the oven is hot. Crumbling around the edge of the concrete base is also normal and is not shipping damage.
How much does it weigh and what does it sit on?
Traditional ovens run 1,250 to 1,800 pounds on a footprint of roughly 39 by 39 inches. Portable ovens are 200 to 400 pounds. A traditional oven needs a level, load-bearing, non-combustible base at around 36 to 42 inches high so the cooking floor sits near counter height. A standard wood deck is generally not built for that point load without additional footings, so have the framing checked first.
How far from the house does it need to be?
At least three feet from your house or any structure or wall, for proper ventilation, with nothing combustible above the chimney. Your local city or county ordinance may require more and it governs. A chimney cap with a built-in spark arrestor is a sensible addition on traditional ovens and comes fitted on portable ones.
What wood should I burn?
Seasoned hardwood only: oak, maple, walnut, mesquite, apple and other fruit woods. Stay away from soft resinous woods like pine and spruce, and do not use coal. Resinous and treated wood soots the dome, tastes bad in the food and creates a chimney fire risk. Store it somewhere covered, because wet wood will not get the oven to temperature.
What tools do I actually need?
Two peels, one wood and one metal. The wood one launches the pizza because dough releases from it cleanly, the metal one turns and retrieves it. Add an oven brush, a shovel for the ash, and an infrared thermometer, since the built-in gauge reads air temperature in Celsius and the floor temperature is what cooks the base. A bubble popper for turning is optional and universally liked.
Can it stay outside all winter?
Yes, and winter cooking is one of the best parts of owning one. Keep it covered between sessions if it sits out in the open, and do not let it stand in wet or under snow for extended periods. Occasional rain is fine. Expect a longer warm-up when it is very cold.
How do I clean it?
You mostly do not. Once the fire is out and cold, shovel and sweep out the ash and it is ready for next time. The fire burns the dome clean itself. Never use soap, detergent or a pressure washer on the cooking floor, since it is porous and will absorb whatever you put on it.
Do I need a permit?
Often not for a freestanding wood-fired oven, but requirements are entirely local. Gas work is almost always permitted and inspected. Setback rules can apply, some air quality districts restrict outdoor wood burning, and a built-in installation is sometimes treated as construction. Call your building department before ordering and clear your HOA separately, because an HOA can require removal of something otherwise fully legal.
How much fuel does it use?
A wood-fired session uses roughly 20 to 35 pounds of hardwood including warm-up, so a cord lasts most home cooks a season or more. A gas burner around 52,000 BTU uses about half a gallon of propane an hour, or about half a therm of natural gas. Multiply by your own local rate. Buying wood by the cord rather than in boxed kiln-dried bundles is by far the cheapest way to run one.
Is shipping really included?
Yes. Freight and curbside liftgate delivery are included and fully insured on every pizza oven we sell within the contiguous US, to residential and commercial addresses alike. There is no freight charge added at checkout and no separate invoice afterward. Delivery is curbside only, so plan on equipment or several people to move the crate from the driveway to the base.
Can I return it if I change my mind?
No. Because of the weight, value and specialist freight handling, all sales are final once an oven has shipped, and anything installed, fired or used is non-returnable. Returns are accepted only for valid shipping damage, reported per the inspection process at delivery, within 14 days. Concealed damage must be reported within 48 hours and missing items within 5 days. This is standard across the category, which is exactly why we would rather talk through sizing and site before you order than after.
